INGREDIENTS:
  • 1 1⁄2 cups corn syrup (1/2 light and 1/2 dark)
  • 1 cup brown sugar (or 1 cup white sugar depending on preference)
  • 1⁄4 cup butter
  • 4 eggs (room temperature to avoid clumping when mixing with syrup mixture)
  • 1 1⁄2 teaspoons vanilla
  • 1 1⁄2 cups pecans, coarsely broken
  • 1 unbaked deep dish pie shell

PROCEDURE:
  1. Preheat oven to 350°F (176° C).
  2. In saucepan boil corn syrup and brown (or white) sugar together for about 2 to 3 minutes; set aside to cool slightly.
  3. In large bowl, lightly beat the eggs.
  4. VERY slowly pour the syrup mixture into the eggs, stirring constantly.
  5. Strain the mixture to make sure it's smooth and lump free.
  6. Stir in butter, vanilla, and pecans and pour into crust.
  7. Bake at 350°F (176° C) for approximately 45 - 60 minutes or until set.
